Ingredients
- 1 lb ground turkey
- 2 cloves garlic, minced
- ½ onion, diced
- 1 bell pepper, sliced
- 1 zucchini, diced
- 1 carrot, shredded
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 tsp paprika
- ½ tsp cumin
- Salt and pepper to taste

Instructions
Heat the olive oil in a large skillet over medium heat, add the onion and cook for 2–3 minutes until softened, then stir in the garlic and cook for 30 seconds before adding the ground turkey, seasoning with salt and pepper and cooking while breaking it apart until browned; mix in the paprika and cumin, then add the carrot, bell pepper, and zucchini and cook for about 5–7 minutes until tender, stir in the soy sauce and combine well, and finish with a squeeze of fresh lemon juice before serving.

- Let the ground turkey sit undisturbed for 1–2 minutes before breaking it up — this helps it brown and builds much richer flavor.
