- 1 teaspoon vanilla extract
Instructions
Preheat the oven to 350°F (175°C). In a bowl, mix the blueberries with honey, vanilla, lemon zest, and cornstarch, then pour the mixture into a lightly greased 8x8-inch baking dish. In another bowl, combine the flours, baking powder, and salt, then add the melted coconut oil, honey, milk, and vanilla, stirring until smooth and slightly thick. Spoon the batter over the blueberries unevenly, leaving some berries visible. Bake for 30–35 minutes, or until the topping is golden and firm to the touch. Let the cobbler cool for about 10 minutes before serving, and optionally enjoy it with Greek yogurt or coconut ice cream for an extra healthy touch.
