Ingredients
- 1 lb ground lamb
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp ground coriander
- ½ tsp dried oregano
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional)
- 1 cup cherry tomatoes, halved
- 2 tbsp fresh parsley, chopped

Instructions
Heat the olive oil in a large skillet over medium heat and sauté the chopped onion for 3–4 minutes until soft. Add the minced garlic and cook for about 30 seconds until fragrant. Add the ground lamb, breaking it up with a spoon, and cook for 6–8 minutes until fully browned. Stir in the cumin, smoked paprika, ground coriander, dried oregano, salt, black pepper, and red pepper flakes if using, mixing well so the lamb is evenly coated with the spices. Add the cherry tomatoes and cook for another 2–3 minutes, just until they soften. Remove from heat and finish with fresh lemon juice and chopped parsley
