Ingredients
For the mushrooms:
- Fresh mushrooms (oyster, maitake, or whatever you have)
- Salt

Olive oil (added later with the liquid)
For the braising liquid:
- White wine (a splash)
- Honey (a tiny squeeze)
- Aromatics to taste (star anise, whole peppercorns, bay leaf, garlic and thyme)
- Olive oil (to incorporate at the end
For the Green Tahini Sauce:
- A large handful of fresh herbs (mint, dill, basil)
- 1 cup Greek yogurt
- 1–2 tsp tahini
- Lemon juice and zest
- 1 clove garlic
- Olive oil
- Salt and pepper
Instructions
1.Mushrooms: Use good mushrooms (oyster, maitake, anything fresh). Don’t wash them, just brush off the dirt so they don’t get soggy. Salt lightly & place on a parchment lined tray with edges.
2.Braising Liquid: In a small pot, warm a splash of white wine with a tiny squeeze of honey & any aromatics you like (star anise, peppercorns, bay leaf, garlic, thyme, etc.) Simmer until reduced by half, then whisk in a bit of olive oil.
3.Bake: Pour this mixture over the mushrooms, enough to moisten but not fully submerge. Cover tightly with foil so it steams, & bake at 350°F for 30–45 minutes until tender & caramelized.
4.Green Tahini Sauce: Blend a big handful of fresh herbs (mint, dill, basil), 1 cup Greek yogurt, 1–2 tsp tahini, lemon juice + zest, a garlic clove, olive oil, salt & pepper. Mix until smooth & bright green.
