Ingredients
- 4 medium sweet potatoes
- 2 tbsp olive oil
- ½ tsp salt

For the filling
- 3 tbsp Amish butter, melted
- 2 tbsp Florida honey
- 3 oz goat cheese, crumbled
- ¼ cup pecans, chopped
- 1 tbsp fresh rosemary, finely chopped

Zest of ½ orange (optional, but recommended)
Instructions
Preheat the oven to 400°F. Wash and dry the sweet potatoes, then pierce them several times with a fork. Rub with olive oil, salt, and pepper, and bake directly on the oven rack or on a baking sheet for 45–50 minutes, until tender.
Slice each sweet potato lengthwise and gently mash the inside with a fork. Mix the flesh with the melted butter and honey, then top with goat cheese, pecans, rosemary, and orange zest. Return to the oven for 5–7 minutes, just until the cheese softens.
