Beef Stew with Sweet Potatoes

Ingredients

  • 1 lb of beef stew meat, cut into bite-sized pieces
  • 2 medium sweet potatoes, peeled and diced
  • 1 bunch of collard greens, washed and chopped into strips
  • 1 large sweet onion, chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons of tomato paste
  • 4 cups of beef broth
  • 1 teaspoon of dried thyme
  • 1 teaspoon of smoked paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • Optional: 1/2 teaspoon of crushed red pepper flakes for a bit of heat

Directions

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

In the same pot, add the chopped onion and cook until it becomes translucent, about 5 minutes. Add the garlic and cook for another minute until fragrant.

Stir in the tomato paste, thyme, smoked paprika, bay leaf, salt, pepper, and optional red pepper flakes. Cook for another 2-3 minutes to develop the flavors.

Pour in the beef broth and return the browned beef to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1 hour, or until the beef is tender.

After the beef has cooked for an hour, add the sweet potatoes and collard greens to the pot. Continue to simmer for another 20-30 minutes, or until the sweet potatoes are tender and the collard greens are cooked through. 

Taste the stew and adjust the seasoning with more salt and pepper if needed. Serve hot and enjoy this hearty and nutritious dish.
