Butternut Squash and Goat Cheese Savory Tart

Ingredients

  • 1 butternut squash, peeled and cut into cubes
  • 1 tart crust (can be puff pastry or shortcrust pastry)
  • 1 red onion, finely chopped
  • 2 garlic cloves, chopped
  • 5.5oz goat cheese, crumbled
  • 2 eggs
  • 1 cup heavy cream 
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme leaves (optional) for garnish

Directions

Preheat the oven to 400°F. Place the butternut squash cubes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes, or until tender and slightly golden. Remove from the oven and let cool.

Meanwhile, in a medium pan, heat a little olive oil over medium heat. Add the onion and garlic, and sauté until tender and fragrant. In a large bowl, whisk the eggs with the heavy cream. Add salt and pepper to taste.

Roll out the tart crust and fit it into a tart pan, pricking the bottom with a fork. Pre-bake the crust for 10 minutes.

Once the crust is slightly golden, evenly distribute the roasted butternut squash, onion, and garlic over the crust.

Pour the egg and cream mixture over the butternut squash and onions. Sprinkle the crumbled goat cheese on the top. Bake the tart for 30-35 minutes, or until golden and set. 

Garnish with fresh thyme leaves before serving, if desired.
