Ingredients
For the lamb filling:
- 1 lb ground lamb
- 1 tbsp olive oil
- 2 cloves garlic, minced
- ½ red onion, finely chopped
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp fresh lime juice
- ½ tsp red pepper flakes (optional)

For the lamb filling:
- ½ cup fresh orange juice (about 1 large Florida orange)
- 1 tsp orange zest
- 1 tbsp rice vinegar
- 1 tbsp honey
- 2 tbsp fresh mint, finely chopped
To serve:
- 1 head butter lettuce or romaine, leaves separated
- 1 avocado, diced
- 1 carrot, shredded
- 2 green onions, sliced
- Extra mint leaves or cilantro for garnish
Instructions
Heat olive oil in a large skillet over medium-high heat. Add garlic, onion, and ginger; cook for about 2 minutes until fragrant.
Add the ground lamb, breaking it apart with a spoon, and cook for 7–8 minutes until browned. Stir in soy sauce, honey, lime juice, red pepper flakes, salt, and pepper; remove from heat. In a small saucepan, combine orange juice, zest, rice vinegar, and honey. Simmer over medium heat for 3–4 minutes until slightly reduced, then stir in chopped mint and let cool.
To assemble, spoon the lamb mixture into lettuce leaves, top with diced avocado, shredded carrot, and green onions, then drizzle with the orange-mint sauce. Garnish with extra herbs and enjoy!
